'Coconuts for You' Smoothie

A new month means a new TASTY TUESDAY, and this month we’re excited to welcome well known nutritionist and author Lola Berry to our Tuesday foodie column!

Lola has a thing about smoothies. She’s SO obsessed with them, in fact, that she has just released a brand new book full of fresh smoothie and juice ideas – Lola Berry’s Little Book of Smoothies & Juices!

This month, Lola shares four of her favourite smoothies with us, kicking off with her ‘Coconuts for You’ coconut and blueberry smoothie. Using just four ingredients, this recipe takes about 2 minutes to make (as long as you remember to soak your cashew nuts overnight first!). We love to make ours with frozen blueberries, for a delicious icy consistency!

This month I am excited to be TDF’s Tasty Tuesday contributor, sharing recipes from my new book on all things smoothie! This little book was created because I’m a bit of a smoothie and juice nerd. I love being healthy and getting nutrient dense food in, but often I’m running around trying to do a zillion and one things, and don’t have loads of time. These creations are simple, quick and tasty.

Smoothies are a brilliant meal on-the-go. I sometimes even have them for dinner if I’m exhausted – any excuse to get them in! If I feel like a treat, I’ll make the cacao based ones and pop them in the freezer for around 20 minutes so they kind of go like a chocolate mousse…!

The first recipe I’m sharing today is one of my favourites because it’s so simple – we’re talking like four ingredients in total! The combo just works. You can play around with the ingredients too – macadamia nuts work really well in the place of cashews, for instance. When I worked at a health store, each morning we used to make a big batch of this and just sip on it throughout the day! It’s brilliant for glowing skin with all the blueberries in there, and if I ever want it to really fill me up, I just add a scoop of unflavoured protein powder and it hits the spot.

 

Ingredients (Serves 2)

For the smoothies

150g (1 cup) blueberries (fresh or frozen)

1 handful of cashew nuts, soaked for 2 hours or overnight, then rinsed

Pinch of ground cinnamon

600ml coconut water

For the topping (optional)

1 handful of fresh blueberries

Shaved fresh or dried coconut

Method

Pop all the ingredients in the blender and whiz everything together until you have a silky smooth consistency.

Pour into glasses and top with extra fresh blueberries to finish. Enjoy!
