This month we welcome a new Tasty Tuesday contributor – Tom Rutledge. After cutting his culinary teeth on Masterchef in 2011, Tom is now at the helm of popular meal-kit delivery service, HelloFresh, and will be sharing a selection of their top-rated recipes all this month.

Today, Tom shares his Spicy Tofu Tacos with crunchy slaw and mango mayo.
Life’s full-on these days, and I think weeknight dinners have taken a hit – there’s more cooking inspiration around than ever before, but it can be sometimes hard to get to the supermarket to pick up new ingredients after a long day at work.
Today I’m sharing one of our top HelloFresh meal-kit recipes, as voted by the busy Australian families and individuals who have used our service since we launched five years ago. This recipe stars tofu, which I’ve discovered to be a bit of a ‘gentle giant’. An amenable and versatile ingredient, it’s not always an obvious choice, but it’s healthy and delicious when marinated or paired with spices like taco seasoning. For me the best tacos are all about the combination of zing, crunch and creaminess, and these Spicy Tofu Tacos have all of this and more.
Ingredients (serves 4)
Prep: 10 mins. Cook: 10 mins. Total: 20 mins
- 4 cups finely sliced red cabbage
- 2 Tbsp olive oil
- 1 lemon, juiced
- 2 blocks spicy tofu, cut into thick slices
- 8 mini tortillas
- 1 avocado, sliced
- 1 small bunch coriander, leaves picked
- 4 tbs Roza’s mango mayonnaise
- 2 long red chillis, finely sliced
Combine the red cabbage, half of the olive oil and the lemon juice in a large bowl. Season with salt and pepper and set aside.
Lightly grease a medium frying pan with the remaining olive oil and heat over a medium-high heat. Add the spicy tofu and cook, stirring, for 1 to 2 minutes, or until golden.
Meanwhile, heat the mini tortillas in a microwave or sandwich press (if using the microwave, place tortillas on a plate first).
To serve, divide the tortillas between plates. Top with the avocado, cabbage mixture, tofu, coriander, mango mayonnaise and fresh long red chilli.
