We humans have been using herbs for cooking and healing for thousands of years. There are records of people using bay and thyme over 50000 years ago, and the Chinese have been at it since 2500bc. So not only do these amazing plants look good, smell amazing, taste incredible but they are good for us too!

I'm a huge fan of using herbs in my work and the most exciting thing for me is being able to pick them out of my own garden! Just last week Cecilia Fox and Georgeous had a beautiful wedding at Trunk in the city, we used mostly herbs in jars that I had picked that very morning...rosemary, mint and lemon balm and parsley flowers.. yum, good enough to eat!

I love using rosemary in weddings, call me old fashioned but I love the history. In the middle ages, rosemary was associated with wedding ceremonies, the bride would wear a rosemary head garland and the groom and wedding guests would all wear a sprig of rosemary, from this rosemary evolved into a love charm.

Newly wed couples would plant a branch of rosemary on their wedding day. If the branch grew it was a good omen for the union and family. In Shakespeare's Hamlet, Ophelia says, "There's rosemary, that's for remembrance." Legend and science says it's good for your memory.
